Courgette & Mushroom Roll

Light, savoury and full of flavour, this Courgette & Mushroom Roll makes a simple family meal or an impressive dish for gatherings. Soft courgette layers and golden mushrooms come together with a touch of PureKtchn spices for extra depth.

Ingredients

- 3 medium courgettes
- 3 eggs
- 1/2 cup plain flour
- 200g mushrooms, finely chopped
- 1 tsp PureKtchn spices
- Salt and black pepper to taste
- Olive oil for cooking

Method

1. Preheat oven to 180°C (fan 160°C).
2. Grate the courgettes and squeeze out as much excess moisture as possible using a clean kitchen towel. Set aside.
3. In a bowl, beat the eggs. Gradually whisk in the flour until smooth.
4. Stir in PureKtchn spices, salt and pepper.
5. Heat a little olive oil in a pan and sauté the mushrooms until soft and lightly golden. Allow to cool slightly.
6. Line a baking tray with parchment paper. Spread the grated courgettes evenly into a thin layer.
7. Scatter the cooked mushrooms over the courgettes, then pour the egg mixture evenly on top.
8. Bake for 25–30 minutes until set and lightly golden.
9. Allow to cool slightly, then carefully roll using the parchment paper as support. Slice and serve warm.

Serving ideas

- Serve with a fresh green salad
- Add a spoon of Greek yogurt or soft cheese
- Enjoy as a light lunch or dinner
