Protein-Rich Lobio

Ingredients:
2 cups cooked black beans  
1 onion, finely chopped  
2 cloves garlic  
2 cups chopped tomatoes  
1 tsp cumin  
Fresh parsley  
Salt & pepper

Method:
1. Sauté onion and garlic in olive oil until soft.
2. Add tomatoes and cumin, simmer for 5–7 minutes.
3. Stir in beans and cook for 10–15 minutes until flavours deepen.
4. Add PureKtchn Dried Vegetable Mix and cook for a further 2–3 minutes.
5. Finish with fresh parsley and season to taste.
