☞INGREDIENTS

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 1/2 cup plant-based milk (such as almond or oat milk)
  • 2 tablespoons ground flaxseed or 2 eggs 
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray or oil for greasing
☞METHOD
  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. Place the grated zucchini in a clean kitchen towel and squeeze out any excess moisture.
  3. In a large bowl, combine the grated zucchini, all-purpose flour, plant-based milk, ground flaxseed or eggs, baking powder, salt, and black pepper. Stir well until all the ingredients are fully combined.
  4. Lightly grease the preheated waffle iron with cooking spray or oil.
  5. Spoon the zucchini batter onto the hot waffle iron, spreading it evenly. Close the lid and cook until golden brown and crisp.
  6. Repeat the process until all the batter is used.
  7. Serve the zucchini waffles warm with your favorite toppings such as fresh herbs, greek yogurt of avocado slices.
