Zucchini Waffles
Crispy on the outside, soft and tender inside. These savoury zucchini waffles are simple, nourishing and perfect for relaxed weekend mornings or quick weekday brunches.

Ingredients:
- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 1/2 cup plant-based milk (almond or oat)
- 2 tbsp ground flaxseed mixed with 5 tbsp water (or 2 eggs)
- 1–2 tbsp PureKtchn Dried Vegetable Mix
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1/4 tsp black pepper
- Olive oil or cooking spray for greasing
Method:
1. Preheat your waffle iron according to the manufacturer’s instructions.
2. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
3. In a large bowl, combine zucchini, flour, plant-based milk, flax mixture (or eggs), Dried Vegetable Mix, baking powder, salt and pepper. Mix until just combined.
4. Lightly grease the waffle iron.
5. Spoon batter evenly onto the hot waffle iron and cook until golden brown and crisp.
6. Repeat with remaining batter.
Serve warm with:
