Banana Bread
A soft, moist banana bread made with very ripe bananas and simple ingredients. Perfect for breakfast, afternoon tea or an easy homemade snack.

Ingredients
- 2–3 very ripe bananas (about 1 1/4–1 1/2 cups mashed)
- 75g melted butter
- 1/2 tsp baking soda
- Pinch of salt
- 150g sugar (adjust to taste)
- 1 large egg, beaten (or 1 additional mashed banana)
- 1 tsp vanilla extract
- 205g gluten-free flour (or plain flour)
Method
1. Preheat the oven to 175°C and grease an 8 x 4-inch loaf tin.
2. In a bowl, mash the bananas until smooth. Stir in the melted butter.
3. Add baking soda and salt. Mix in sugar, egg (or banana) and vanilla.
4. Fold in the flour until just combined. Do not overmix.
5. Pour the batter into the prepared loaf tin.
6. Bake for 55–65 minutes, until a skewer inserted into the centre comes out clean.
7. Allow to cool before slicing.
Serving ideas
- Serve warm with a little butter
- Add chopped walnuts for texture
- Stir in dark chocolate pieces for a richer version
